Opinions on water tables and designs?

I'm seriously thinking about putting in my order for a Dynatorch Super B table.

One of the things I've got to get resolved is how to control the fumes and sparks. Most of the water table designs I've seen have the material being cut practically sitting in the water. Recently while going thru Youtube videos I ran across this guy - who built something a little bit different - the water sits well below the level of the slats - so he's not getting water on the work, and he's got a fan pulling a draft on the table too. From the looks of it - he gets little to no fumes from the table.

I'm wondering what people think - downdraft, or water table? Is it better to have the water sitting below the work like the guy above did? I'd like to keep my shop clean - so I'm going to have to come up with some sort of solution for this.

Check out the tables from LDR Motion Systems. You can raise and lower the water level by opening and closing air valves.
