Can I change the feedrate without having to go back into sheetcam and change if I decide it’s too slow or too fast while cutting?

You haven't posted what software you're running.
Mach3 you click on edit Gcode then look for F code and change them all to whatever speed you want.

YOu can move the green slider up and down on the fly, but changing the feed rate in the G-code is better, and it would be there the next time you cut that G-code. :)
