I am cutting and everything is going smoothly. The cutting Arc stops, the pilot arc is still lit. I have had it in to the shop 3 times and they can't find anything wrong.

The switch on the front, can you just check if it is set to the correct setting and not expanded metal.
That should be the only setting the torch drops from cutting back to pilot setting... I've not used gouge but once the arc is transferred it should stay cutting until lost

Also if you have been cutting by accident in expanded metal mode, the consumables could have taken a battering and now are being problematic to keep the arc initialised. Recommend taking all the consumables out of the torch and inspecting them.
The service manual also recommends checking your work clamp and inspecting the cable too.
It may be worth while if it is a well used machine to give it a compressed air blow out with the covers off and also toggle the switch as something may be conducting where it should not around the 3 function switch
